I found that I get 100% of my need for vitamin B3 in a drink I like called muscle monster. Vitamin B3 is Niacin. It is found in many other foods including bread and peanut butter. I am not familiar with Vitamin K2. ?? Salt is overly saturated in American food. Iodine is in much of the salt. So I doubt that is a problem for most Americans.

Steve, I too believed my diet was too low in Iron, but then I downloaded the cronometer app, started weighing and logging carefully what I ate and realized Iron is all right, whereas some others micronutrients like B3 and omega3s tend to be low. I suggest you do that as well, the basic app is just a couple of dollars but it is sure worth it. There is no other way you can really monitor your macros and micros intake. Some micronutrients are not present like Iodine and K2, but after careful study I started taking supplements.

K2 is a complex issue. It is not found in many foods, but it is very abundant in natto, you can find it in oriental foodshops. Apparently it is vital to direct the traffic of calcium to the bones, among other things.
I do not eat many cereals so B3 is usually little for me but I'm going to be more careful, carrots, mushrooms, are rich in B3 in addiction to teh foods you cited. And I already started a specific supplementation scheme.
I tend to know now what I eat so I know what I might be missing or know which poisonous I might ingest and take antidotes.
Of course it is impossible to know everything so intuition and instinct also have a role.
