One can get very far on lentils, or beans and tomatoes mixed with any other greens...

Indeed so, if one is able to eat enough legumes.

Soy is a legume as well and is particularly rich in an easily absorbable matrix of aminoacids. Besides,  it can be eaten in many forms, like soymilk, tofu, tempeh, edamame and of course the unprocessed bean itself.
